Changes in consumer behaviour, as well as growing population and economic growth are leading to an increasing demand for meat and meat products. The HighTech Europe Network of Excellence is organising a Case Study on High Pressure processing for meat applications on the 22nd of September at Romaero Baneasa, Bucharest, Romania along the largest meat industry exhibition from South - Eastern Europe - CARNEXPO.The upcoming HighTech Europe Event in Bucharest, Romania, will start with an insight on current trends in novel processes for the meat industry with specific examples from the European industry and will continue with a presentation of the bottlenecks of the Romanian meat industry.The focus of the event will be afterwards set on High Pressure Processing (HPP) Technology as innovation for the meat industry. The HPP Case study is aiming at introducing this novel technology to the East European Market. The technology itself, applications and benefits will be outlined. A round table will be organised between researchers, Romanian policy makers and industry to discuss barriers and opportunities for the implementation of this novel technology in the East European Meat Industry.
