Kitchen to Factory - Successful Product Scale-up

When moving from the development kitchen to the pilot plant and then to factory scale, there are many things that can go wrong. This course from Leatherhead will highlight some of the challenges in product scale-up, and how these can be anticipated.

Product development is a very challenging business with many difficulties and pitfalls for the unwary. Whilst success cannot be guaranteed, by anticipating the challenges and putting in place suitable action plans you can reduce both the likelihood and impact of complications. This is especially true when up-scaling from the development kitchen to the pilot plant or from the pilot plant to factory scale. Even after these stages, it is possible that further up-scaling to larger vessels and higher throughputs may be required, as the production gains momentum with increasing sales. It is well known that temperature control and energy dissipation will change considerably during scale-up, but this does not tell the full story. Leatherhead’s Kitchen to Factory – Successful Product Scale-up is a two-day training course that will give an overview of the various challenges that can occur when progressing from the kitchen to the factory. The actions that can be taken to prepare for these challenges and ‘design-in’ the factory requirements at an early stage will be covered. The course will also use a number of case studies from different sectors of the food industry to provide real-life and practical examples.
